Breast duck with orange,fennel & Lettuce

• 6 duck breasts

• 6 fennel worms

• 3 oranges

• 150 g lettuce

• 1.5 tsp. pepper

• 12 tbsp. sugar

• 3 cl light balsamic vinegar

• 375 ml orange juice Crema di balsamic

• Salt & Pepper


•Season the duck breast with salt and pepper and sear it on the skin side until crisp.

•Cook it in the oven at 120 °C for about 10 minutes (core temperature 62 °C) until pink. 

•Cut fennel into thin wedges and sear these in butter and sugar. 

•Slake them with orange juice and balsamic vinegar and reduce to a syrup. 

•Enhance it with orange fillets and pink pepper and add salt and pepper to taste.

•Arrange the oranges and fennel on the plate and marinate with orange syrup. 

Slice and add the duck, place the lettuce on the top and enhance with a little crema di balsamic

Cooking time: approx. 40 min.
