Cod Fillet on a bed of vegetables and herbs

1.750 g cod fillet

2.150 g of carrots and 150 g of leek

3.150 g of celery

4. 400 ml white wine

5.750 ml fish stock

6.750 g potatoes,100 g butter

7. 1 large bunch of parsley, salt, pepper


Step 1 Cut carrots,leek and celery into fine strips.
Step 2 Boil up the wine and the fish stock,season it lightly,then add the vegetables and leave to stand for 5 minutes.
Step 3 Debone the fish fillet and cut into identically sized strips.
Step 4 Leave to cook in boiling water for 5 to 7 minutes.Meanwhile peel and boil the potatoes,mash finely with the butter and finely chopped parsley and season with salt and pepper to taste.
Step 5 Serve everything together with the root vegetables and the fish

Tip- Serving with the aid of a smoking pipe:

The smoke from the pipe can be collected in a glass bell jar over the fish, which absorbs the fine smoke flavor. At the table the guest lifts the glass and enjoys both the fine aroma and the spectacular sight. Smoking chips to suit different tastes(e.g. juniper or olive) provide the appropriate aroma and flavor. Very slightly moisten the smoking chips _the smoke will be denser, lighter and more fragrant.
