Crispy Breast of Duck Sous Vide with Honey

It is our time to shine and show off our cooking skills while staying at home safely. Here is an easy recipe for making crispy breast of duck. Let’s check it out.All the ingredients are available at METRO. 


  • 3 duck breasts

  • 3 stalks each of rosemary and thyme

  • 3 large sage leaves

  • 3 cloves of garlic

  • 1 orange

  • 3 tbsp. honey

  • Salt

  • Pepper

Cooking and Preparation:

  1. Rinse down the duck breasts in cold water and dab them dry, then trim them. Make shallow cuts in their skin.

  2. Salt and pepper the meat on both sides. Cover it with the herbs and bruised garlic cloves. Enhance it with orange zest and honey.

  3. Place each duck breast in a vacuum bag... ... and vacuumise it.

  4. Cook the duck breasts in a sous vide cooker or a water bath at exactly 55 °C for two hours.

    Then remove the vacuum bags.

  5. Lay the duck breasts on a baking tray lined with baking parchment and gratinate them in the oven for approx. 5 minutes until crisp.

  6. Slice the duck breasts to serve.
