Fish Curry

1.750 g of fish fillet

2. one onion, one clove of garlic,one chili

3. 3 sticks of celery, one sweet pepper

4.200 g of sugar peas, one leek, two stalks of lemon grass

5. 12 shrimps table spoon of palm sugar (jaggery), 

7.2 table spoon of soy sauce, fish sauce and curry powder

8. 800 ml of fish stock

9.4 kaffir lime leaves, 3 stalks of Thai Basil and Coriander

10.Peanut Oil


1.Finely slice the onion, the garlic and the chili and cut the vegetables into strips.
2.Bruise and coarsely cut up the lemon grass.
3.Cut the fish into small pieces and trim the shrimps.
4.Lightly braise the onions with the garlic and the chili in a work containing a little peanut oil.
5.Add the vegetables and lightly toast them with the palm sugar and the curry powder.
6.Shake everything with the fish and soy sauce.
7.Top it up with the fish stock and add the lemon grass and the kaffir leaves.
8.Simmer everything for 5 minutes. Then, add the shrimps and the fish and leave to simmer for 5 minutes.
9.Shred the herbs, enhance the curry with them and serve it.
