Spaghetti Salad


Light and fresh, a simple spaghetti salad that is easy to make with just a few ingredients and fresh veggies. Tossed with Italian dressing, pre made or fresh, it’s a great dish for customers to enjoy on its own or if preferred as a side dish to other Italian faire! Here’s how:


1.  package 16 ounces thin spaghetti, halved

2.1 cup cherry tomatoes halved

3.1 cup diced cucumber

4.1 cup thinly sliced salami slices

5.1 medium diced green bell pepper

6.½ small diced red onion

7.½ cup thinly sliced black olives

8.8 oz. Italian salad dressing

9.1 cup grated Parmesan Cheese

10.½ teaspoon paprika

11.Salt & pepper to taste


1.        Cook spaghetti according to package directions, el dente; drain and rinse.
2.        Add a drizzle of olive oil after rinsing, so pasta does not stick together.
3.        Refrigerate until cool.
4.        Place in a large bowl and add tomatoes, cucumber, salami, pepper, red onion, and olives.
5.        Pour dressing over the ingredients and toss.
6.        Gently mix in Parmesan cheese.
7.        Cover and cool for at least 2 hours or less and serve.
